If you walk down any street in the early evening, you will see vendors with little grills and stands everywhere selling anticuchos, a kind of Peruvian kebab. My travel companion described them to me as “marinaded beef heart.” To my American taste buds, that did not exactly sound mouth-watering, but in the spirit of “when in Rome, do as the Romans do,” I gave it a try.
